Itnormally takes 15 to 20 days before it is ready to bemarketed. The taste remains quite light and very tasty,although flavored with a rather strong taste and odorfungus.
Our truffle cheese of the Duke looks like a round shape inthe basket; the crust is thin, pale with white truffle shavings.The dough inside, very creamy and flaky, has a slight eyeformation typical of all cheeses and an unmistakable scentgiven to her by the same slivers of truffles. Serve at roomtemperature, so it should be removed from the refrigeratorat least one hour before drinking.
The truffle cheese of the Duke can be used to accompany amenu based on truffles, to prepare delicious cold canapés,or time for hot croutons with bread; is also interesting as asauce for baked pasta dishes.
