 The truffle is a food highly prized and sought after, grows naturally in the soil near the roots of some trees, with which establishes a symbiotic relationship. Its typical bouquet, penetrating and persistent, develops only after curing and is intended to attract wild animals, to spread the spores contained and perpetuate the species.
Pairings: Excellent for starters. Ideal condiment for pasta dishes and roast meats with truffles.

The earliest records about truffles appear in the Naturalis Historia of Pliny the Elder. In the first century AD, thanks to the greek philosopher Plutarch of Chaeronea, was passed on the idea that the precious fungus was born from the combined action of water, heat and lightning. From here they were inspired many poets to explain the origin of the precious fungus.

Italy is one of the largest producers and exporters of all kinds of truffles. In particular, the black truffle, which sees in Umbria one of the areas most suitable for its production.

Il tartufo è un alimento estremamente pregiato e ricercato, cresce spontaneamente nel terreno accanto alle radici di alcuni alberi, con i quali stabilisce un rapporto simbiotico. Il suo tipico profumo, penetrante e persistente, si sviluppa solo a maturazione avvenuta e ha lo scopo di attirare gli animali selvatici, per spargere le spore contenute e perpetuare la specie.
Abbinamenti: Ottima per Antipasti. Condimento ideale per primi piatti e arrosti di carne tartufati.

Le prime notizie certe sul tartufo compaiono nella Naturalis Historia di Plinio il Vecchio. Nel I secolo d.C., grazie al filosofo greco Plutarco di Cheronea, si tramandò l’idea che il prezioso fungo nascesse dall’azione combinata di acqua, calore e fulmini. Da qui trassero ispirazione vari poeti per spiegare l’origine del prezioso fungo.

Fin dal medioevo il tartufo è rimasto un cibo altamente apprezzato, per alcuni scienziati dell’epoca, il suo aroma era una sorta di quinta essenza che provocava sull’essere umano un effetto estatico.
