When I talk about Truffle with my friends, collaborators, operators or someone else, one of the most frequently asked questions is: "How do you define the price of the truffle?", "How much do truffles cost?", "Is it the right price? ".
We must make a premise: who buys is a wholesaler, a restaurateur or a private individual?
The reason for this question is given by the fact that the price of black truffle, as well as white truffle, and of all variety existing on the market, changes in relation to the market.
So let's start with the black truffle
The price of this variety of truffle referred to a wholesale market is lower, increase after because it is re-priced at the points of sale.The variables for price increases or decreases are many, as for all products, but for truffles is always the same: the actual availability of the product, related to the demand. So, the price is higher when the quantity drops.
In fact, truffles are seasonal products and it is not always the right time to buy them.
To buy all types of truffles at a good price,it is necessary that there is a fair number of them on the market , therefore the weather must have been favorable. The truffle needs "normal" seasons with rainfall alternating with sunny days.
If you imagine to have a vegetable garden, you konw that you must watering it in the evening and let the sun act during the dayon summer. It's the same for our truffles, if the wheather it will be good they will be born abundant and of great quality and size.
All factors affect the pricing of the black truffle.
Indeed, Its market is very complex and it's collection and sale process is entrusted to hundreds of small operators that act autonomously and cause heavy fluctuations. on the graph below, there is a summary of the truffles' price of the last three seasons, to explain better the trend of wholesale prices.
The fresh product should always be kept in the fridge wrapped in paper towels and closed in a glass or plastic container. However, you must make sure that the paper remains dry: if necessary, it must also be changed every day. The minimum conservation period of the Truffles depends a lot on the type (blacks and summer black truffle are more resistant, while the white and the bianchetto truffles are spoiled faster), the size and seasonality. Our advice is to consume it within 4/5 days.
From our great experience in the sector, our laboratory is currently able to produce a wide range of products based on truffles and mushrooms made with different conservation systems.
The safest and best known sistem is the preserve in oil or brine: after a very controlled sterilization process, the products are ready for use, they have a shelf-life ranging from a minimum of 18 to a maximum of 36 months and they have no need to store in the fridge, unless after opening.
Vacuum packing is the guarantee that the product is intact and safe, as with all preserve systems: it is always advisable therefore to check the absence of the click-clack in the central button of the cap.

Organoleptic characteristics: the peridium has a black color, with protruding warts, of large dimensions, which make it typical. The gleba is hazel colored with numerous whitish veins, more or less subtle. The scent is more delicate than other black truffles and the flavor reminds that of porcini mushrooms.
